돼지고기의 대분할 및 소분할에 대하여 알아봅시다.. 과거에는 축산물을 분할ㆍ정형하는 방법이 지역마다 차이가 있었습니다. 이러한 문제는 소비자가 구매목적에 따라 축산물을 선택할 수 없도록 하였으며, 식육거래의 공정성도 확보할 수 없게 하였습니다. 이에 농림축산식품부는 식육유통질서의 확립을 도모하기 위하여 1991년부터 전국적으로 통일된 축산물의 분할정형기준을 도입하였으며, 1997년부터는 식육판매업소의 부위별 표시ㆍ판매를 의무화하였습니다. 이를 구체화하기 위하여 식육소비습성을 반영하여 부위를 구분하고, 부위별 특징을 감안한 요리용도 등을 표시하도록 하여 소비자가 각자의 구매목적에 따라 식육을 선택할 수 있도록 하기 위하여 「식육의 부위별·등급별 및 종류별 구분방법」을 규정하고 있습니다. 현행 「식육의 부위..
